Three Cheese Mac N Cheese

Serves: 4-6 people

Ingredients:

  • 2 cups (225g) elbow macaroni
  • 3 tbsp local butter
  • ¼ cup all-purpose flour
  • 2 cups warm local milk
  • 1 tsp salt, plus more to taste
  • ¼ tsp pepper
  • ½ cup local old cheddar or smoked gouda, shredded
  • ¾ cup local mozzarella cheese, shredded
  • 1 ½ cup local cheddar cheese,
  • 1 tbsp melted local butter
  • ½ cup panko crumbs
  • 1 -2 cloves minced garlic
  • 2 – 3 fresh basil leaves, chopped

Directions:

  1. Preheat the oven to 350°F. Grease a baking dish.
  2. Cook the macaroni according to package directions until al dente. Drain and set aside.
  3. In a large saucepan over medium heat, melt 3 tbsp butter. Whisk in the flour and cook for 1 minute, stirring constantly, until smooth and lightly bubbling.
  4. Slowly whisk in the warm milk. Add the salt and pepper and cook for 3–4 minutes, stirring often, until the sauce thickens slightly.
  5. Remove from the heat and stir in the 3 cheese types until melted and smooth. Add the cooked macaroni and stir until evenly coated.
  6. In a small bowl, toss the panko, minced garlic, and melted butter together.
  7. Transfer the macaroni to the prepared baking dish. Sprinkle the panko mixture evenly on top.
  8. Bake for 15–20 minutes, or until bubbling and golden on top. Sprinkle with chopped basil and serve warm.
