Ingredients:

  • 1 cup Armstrong High in Protein Marble Cheddar Shredded Cheese
  • 2 large sweet potatoes, washed
  • Olive oil, for cooking
  • Salt and pepper
  • A pinch of paprika
  • 1 cup cooked ground beef
  • 1 tomato, diced
  • ½ cup guacamole, homemade or store-bought
  • A few slices of fresh jalapeño
  • A few flat-leaf parsley leaves
  • Lime wedges, for serving

Directions:

  1. Preheat the oven to 400°F.
  2. Slice the sweet potatoes into thin rounds and place them on a parchment-lined baking sheet. Drizzle with olive oil, then season with salt, pepper, and paprika.
  3. Bake for about 20 minutes, flipping the rounds halfway through, until golden and crisp.
  4. Remove from the oven and cover the sweet potatoes with a generous handful of shredded cheese. Add the ground beef, then another layer of cheese. Return to the oven for about 10 minutes, or until the cheese is fully melted.
  5. Top with diced tomatoes, guacamole, jalapeño slices, and parsley. Sprinkle with a bit more cheese if desired, add lime wedges, and serve while everything is still warm and melty.
