Ingredients:
- 1 cup Armstrong High in Protein Marble Cheddar Shredded Cheese
- 2 large sweet potatoes, washed
- Olive oil, for cooking
- Salt and pepper
- A pinch of paprika
- 1 cup cooked ground beef
- 1 tomato, diced
- ½ cup guacamole, homemade or store-bought
- A few slices of fresh jalapeño
- A few flat-leaf parsley leaves
- Lime wedges, for serving
Directions:
- Preheat the oven to 400°F.
- Slice the sweet potatoes into thin rounds and place them on a parchment-lined baking sheet. Drizzle with olive oil, then season with salt, pepper, and paprika.
