Ingredients:

  • 15 mL (1 tbsp) olive oil
  • 350 g (1 cup) Italian sausage meat
  • 15 mL (1 tbsp) ground cumin
  • 15 mL (1 tbsp) smoked paprika
  • 125 mL (½ cup) Mexican salsa, store bought
  • 150 g (6 cups) corn tortilla chips
  • 200 g (2 cups) Armstrong Tex Mex Shredded Cheese

To serve

  • ¼ cup frozen corn kernels
  • ½ cup cherry tomatoes, halved
  • 1 avocado, cubed
  • Fresh cilantro leaves, chopped

Directions:

  1. Preheat the oven to 200° C (400° F).
  2. In a non-stick frying pan, heat the olive oil and brown the sausage meat for 4 to 5 minutes. As it cooks, break up the sausage meat into small pieces using a wooden spoon. Add the cumin, smoked paprika, and salsa. Continue cooking until the liquid has almost completely evaporated. Set aside.
  3. In a large ovenproof dish, spread out the corn chips and generously sprinkle with Armstrong Tex Mex Shredded
  4. Cheese. Top with the sausage meat and cook in the oven for about 20 minutes or until the cheese has melted and browned.
  5. Add garnish and serve hot.
