Nachos Topped with Italian Sausage

Ingredients:
- 15 mL (1 tbsp) olive oil
- 350 g (1 cup) Italian sausage meat
- 15 mL (1 tbsp) ground cumin
- 15 mL (1 tbsp) smoked paprika
- 125 mL (½ cup) Mexican salsa, store bought
- 150 g (6 cups) corn tortilla chips
- 200 g (2 cups) Armstrong Tex Mex Shredded Cheese
To serve
- ¼ cup frozen corn kernels
- ½ cup cherry tomatoes, halved
- 1 avocado, cubed
- Fresh cilantro leaves, chopped
Directions:
- Preheat the oven to 200° C (400° F).
- In a non-stick frying pan, heat the olive oil and brown the sausage meat for 4 to 5 minutes. As it cooks, break up the sausage meat into small pieces using a wooden spoon. Add the cumin, smoked paprika, and salsa. Continue cooking until the liquid has almost completely evaporated. Set aside.
- In a large ovenproof dish, spread out the corn chips and generously sprinkle with Armstrong Tex Mex Shredded
- Cheese. Top with the sausage meat and cook in the oven for about 20 minutes or until the cheese has melted and browned.
- Add garnish and serve hot.
